Mommy Daughter Brunch

Rea and I had a great weekend, which began with a nice Saturday brunch.

image

We ate at Escalante’s and shared chicken quesadillas and Mexican rice.

For the most part, Rea just played in her food. But it was still a nice day.

Sunday Sundae

Yum!

Ice Cream + Water  = One great Sunday.  We spent a little mommy-daughter time with a trip to Swirll.

Say cheese! (She still refused to look into the camera, though)

Like her hair?  I did it.

Time for a mini-dip.

Fish Food

Our Friday night consisted of eating seafood then feeding the fish outside the restaurant.

Look! Fish!

Rea really enjoyed dropping crackers down to the fishies and watching them fight for the food.  In fact, she talked about it all night.

A nice, peaceful way to kick off the weekend.  What did you do this weekend?

NABJ Flashback

I had planned to do a complete wrap-up of my trip to the National Association of Black Journalists conference, but that never happened.  However, here’s a look back through some of the most memorable photos I managed to snap (or have snapped, since my phone was dead 82.7% of the time.)

People I Met

Constance White, editor of Essence Magazine

Such an elegant woman!  It was a pleasure meeting her.

Me and Shaunie O’Neal

Shaunie participated in a discussion with Essence editor-in-chief Constance White on the controversy behind her VH1 series Basketball Wives.  I got a chance to chat with her after it was over and snap this photo.  (Note: It had been a LONG day!)

Well worth the wait!

One of my favorite spots in New Orleans.  There’s been a wait each time I’ve gone but it has always been worth it.  I enjoyed the meal so much I didn’t get a chance to snap any photos of it.  But I did capture images of other meals I had during the trip.

I enjoyed the trip, but couldn’t wait to get back to my sweetie!  There were so many things I wanted to capture but couldn’t because of my phone issues.  For some reason it would not stay charged while I was on the trip.  Oh well!

Celebrating Spring with Kids

Yahoo! Shine came up an awesome list of things to do during spring with the kiddos.  I can’t wait to cross off this list with Rea:

1. Blow bubbles.  (She just loves them.  And heck, so do I!)
2. Plant flowers. (Herbs and other edibles are fun for kids to grow because they can enjoy their bounty!)
3. Make homemade lemonade. Let the kids host a lemonade stand!  (Rea loves helping out, so this should be fun.)
4. Have a picnic at the beach.
5. Climb trees. (Trees?  I dunno.  Jungle gym?  Maybe.)
6. Grab a blanket and some books and hit the local park for outdoor story time.  (Can’t beat that!)
7. Go for a hike. (OUCH! Must wait til it cools down in Houston.)
8. Have an outdoor movie night.  (I saw that a Facebook friend did this with her girls and it looked like a blast!)
9. S’more party, anyone? (Yum!  Sounds like a mess, though.)
10. Take an evening stroll and listen to the birds as they end their day. (OK, obviously the person who wrote this list doesn’t live down South.  Mosquitos, anyone?)

Anyway, can’t wait to get started.  I’ll be sharing each of these things as we do them.  Anything on the list you’d like to do?

Circus Day

You can’t beat free fun.  Yesterday was all about free fun at our local Chick fil A.  It was circus day complete with games, face painting, clowns and balloons. Check out some of the pics we snapped:

I had to force her to eat one nugget.  Sometimes she loves to eat.  Other times…

She wiped her face just before I hit snap.

Time for a balloon.  She was the very last one in line.

Bonus! A flower bracelet. This balloon lady is serious.  Her name is Shelly.  I should have gotten a card.

The Christening

We were so blessed to share this day with family and friends.  As promised, here are pictures from the Christening and restaurant where we ate afterward.

Mama’s in the Kitchen

I’ll start by sharing that I am no cook.  There are probably 5 dishes — I take that back, 3 dishes — that I prepare well enough to invite people over and share, but even they aren’t worth bragging about.  But I’m somebody’s Mommy now and apparently kids have to eat.  So every now and then I make a trip to H.E.B., check out their Cooking Connection section and whip something up. This weekend I had a taste for a shrimp boil so I looked up a recipe online, clicked on the first link I saw and hopped in the car.  A couple hours later, it actually turned out well, according to me and two others, who are still alive and well 2 days later.  Here’s how it went:

Ingredients:
Zataran’s Crawfish, Shrimp, & Crab Boil

image

1 Red Onion
Cayenne Pepper

image

2 Lemons
Thyme
2 Chappel Hill Sausages
About 10 Red Potatoes
4 Pounds of Shrimp (Tails on)

I started by boiling 6 quarts of water in a big pot, along with  the Zataran’s seasoning. I cut the lemons in quarters and added them, along with the onions (cut up) and a few dashes of thyme and cayenne pepper.  Once that was boiling I threw the sausages, corn and potatoes in.  I cooked it all until the potatoes were soft.  Next, I dropped the shrimp in and cooked that until the shrimp turned pink (about 2 minutes.)  Then I turned off the fire and let the mixture sit for 20 minutes.

image

Tada!  A New Orleans-style shrimp boil.

image

This was too spicy for Rea to enjoy but she did have a good time munching on the corn-on-the-cob that I made later that night.  I wish I would have taken a picture to share with you.

What did you do this weekend? Have you ever done a shrimp boil before?

Talk to you soon!
